What a fun new way to enjoy taco Tuesday…
Fun,bite size and easy!!!
The concept came from me deciding I wanted to bake!!!
And the love for taco’s…
5 SOFT SHELL TACO
1 LB HAMBURGER
1 PACK TACO MIX
1 JAR SLICED JALAPEÑO
1 CUP SOUR CREAM
1 CUP SALSA
1 12 OZ CAN REFRIED BEANS
2 CUPS CHEDDAR SHREDDED CHEESE
2 CUPS SWISS SHREDDED CHEESE
Start by cooking hamburger and add taco mix.. set aside.
Reheat beans and set aside.
Use 1/2 inch measuring cup to cut out perfectly round shells..
Should get about 7 rounds.. per shell
You Need 36 rounds!! 3 per hole at 12 holes.
Start by taking 1 round and placing on the bottom of easy cupcake hole.
Add beans.. about 1 level spoon full..
Add taco meat.. 1 level spoon full..
Add cheddar cheese.. about 1 pinch. To cover taco meat..
Add another shell.. and repeat process.. but before adding cheese. Add jalapeño peppers. Add as many as you like. Or none at all..
Then top with swiss cheese.. about another pinch.
Add last shell.. Press firmly to pack..
Then add cheddar/swiss to top.. level off..
Bake at 350 for 10-12 minutes to melt cheese.. everything was pre cooked.
Pull out and let set for 10 minutes..
Flip over on cutting board and lightly tap pan.. will fall right out..
Flip over and top with sour cream and salsa..
