Been on a mission all week to bake!!
And been coming up with some super fun dishes!!!
So I combined a complete breakfast into a compact muffin…
1 pack pre shredded hashbrowns, defrosted
6 slices bacon. Cunked 1 inch long
1 cup swiss cheese
1 cup cheddar cheese
Start by cooking bacon.
Drain and set aside.
Cook eggs…. And set aside
Take cup cake pan and grease. I used pam
Take 2 large table spoons of hashbrowns and place in each hole..
Use spoon and pack around making a cup.
Bacon,cheese then eggs
Then cheese again and top with 2 more scoops of hashbrowns..
Pack around tightly..
Bake at 375 for 20 minutes..
Take out and put a large pinch of cheese on top..
Place bake in oven for 5 minutes..
(Note) season hashbrowns the way you like.. I used garlic salt and pepper.. table spoon of each..
Take out and set for 10 minutes..
Flip over in cutting board and tap bottom.
Let set for another 5 minutes..
Serve.. makes 12
